Green Goddess Salad

Ingredients
- 1/2 head of green cabbage
- 1 cucumber
- 1 bundle of spring onions
- 30g baby spinach
- 10g fresh basil
- 2 garlic cloves
- 1 small shallot
- 2 lemons juiced
- 60ml olive oil
- 35g cashew nuts
- 40g grated Parmesan cheese
- 2 tbsp rice wine vinegar
- 1 teaspoon salt

STEP 1
Place the chopped cabbage, cucumbers and spring onions in a large bowl.
STEP 2
Add the rest of the ingredients to a blender or food processor. Blend until creamy with a bright green colour.
STEP 3
Pour the dressing over the prepared vegetables and toss to combine.
