Green bean and asparagus filo spiral



5 filo pastry sheets

300g green beans, cooked and finely sliced

100g asparagus, cooked and finely sliced

2 tsp garlic purée

1/2 tsp chilli flakes

3 tbsp rapeseed oil

2 potatoes, peeled and cooked

100g flaked almonds

1 tbsp capers, rinsed and chopped

Juice of 1 lemon

Salt and pepper to taste

1 tsp sesame seeds

Butter or water for brushing  



  1. Preheat oven to 200C
  2. In a bowl, add all the ingredients (excluding the filo sheets and sesame seeds) and mix thoroughly to create your vegetable filling mix                                                                                    
  3. On a flat surface, lay the filo sheets side by side, with the short sides next to each other. Overlap each sheet, adding a little water to help them stick together                                                
  4. Place the vegetable filling mix in a long line (about 2.5cm (1") away from the edge of the filo) and fold the filo over the filling mixture to create a long and thin tube                                             
  5. Starting at one end, roll your long tube inwards to make a tight circle. The end result should look like a Catherine wheel                                                                                                                  
  6. Place your wheel onto a baking tray and brush with your choice of butter or water        
  7. Sprinkle with the sesame seeds and place in a preheated oven for 30 - 40 minutes, or until the filo is golden brown                                                                                                                              
  8. Remove the filo ring and allow to cool slightly before serving
