Beef satay skewers

Ingredients

 

2 tsp minced ginger

2 tsp minced garlic

1 tbsp minced onion

2 tbsp brown sugar

1 tbsp rapeseed oil

1 tbsp soy sauce

1 tbsp ground coriander

2 tsp ground cumin

1/4 tsp turmeric

A pinch of cayenne powder

32g crushed peanuts

200ml coconut milk

75ml coconut water - tap water will work just as well

4 flat iron steaks, cut into 1.5cm (0.5") slices  

Method

 

  1. Place all ingredients apart from the steaks into a large mixing bowl and stir thoroughly
  2. Add the sliced steaks and mix, ensuring the steaks are coated completely in the marinade
  3. Place in the fridge for as long as possible with the marinating time being a minimum of 1 hour
  4. Remove the steaks from the fridge
  5. Zig zag the beef onto to the skewers and place to one side
  6. Using a large frying pan, heat a tablespoon of rapeseed oil and add the marinated skewers
  7. Cook on each side for 2 minutes and remove from the heat once cooked
  8. Serve straight away
