Seared scallops, chorizo and peas



  • 12 scallops, roe removed
  • 250g cooking chorizo, thickly sliced
  • 150g frozen peas, defrosted 




  1. Place a large frying pan on the hob and heat (Circulon Ultimate High Density Forged 25cm Skillet would work perfectly). Cook the sliced chorizo in the frying pan until the oil starts to release and the chorizo starts to colour.   
  2. Line a plate with some kitchen roll and lay the cooked chorizo onto it and allow to drain slightly, leaving a small amount of chorizo oil in the frying pan.                                                       
  3. Place the pan back on the heat, place the scallops into the pan and sear for 2 minutes                 
  4. Turn the scallops over, add the defrosted peas and drained chorizo to the pan and cook for 3 minutes on a high heat                                                                                                                        
  5. Remove the pan from the heat, spoon everything onto a platter and serve with some crusty bread if desired
