Mango ice cream
Ingredients:
- 2 egg yolks
- 1 tbsp lemon juice
- 300ml double cream
- 1 largish mango, de-stoned, chilled - 3/4 blended, 1/4 roughly chopped
- 75g caster sugar
- 300ml cups milk
Put the milk into a pan and bring to the boil. In a separate bowl, beat the egg yolks and the sugar, and add the hot milk to it, stirring all the while. Transfer the mixture to a saucepan and heat gently, stirring constantly until thick. Leave to cool. Once it's cool, stir in the mango. Whip the cream until it forms soft peaks, then fold it into the mango custard. Transfer the complete mixture into the Koolatron ice cream maker and follow the manufacturer's instructions.
Lemon sorbet
Ingredients:
- 225g lemon juice
- Grated zest of 1 lemon
- 450g syrup
A real cinch - simply mix the ingredients, add them to the Koolatron's twin ice cream maker, follow the instructions and let it do the rest of the hard work!
